Did someone say Raw Cake?

So it doesn’t sound that appealing, but on first glance you may already change your mind.  There certainly not your typical fluffy, fluro icing, nutrient-less type of cake.  Even the word cake doesn’t seem to fit the bill – maybe it should be more ‘Torte’ of ‘ Slice’.  Regardless, I decided to try and mimic some delicious Raw Cakes that I was buying from a stall at the Noosa Farmer’s Markets.  It’s always with good intention to shop for fresh local produce for the week, but ravenous hunger after a long run kicks in quickly and never get that much further than fuelling up on ‘Superfood Brownies’ and ‘Raw Cakes’.

Usually if it’s with a nice little coffee we tend to push through the food coma, some more grazing and hopefully it’s finished off with some weekly supplies.  i.e with intention to make some at home.

So here in one of my various ‘flavour of the month’ versions of a delicious raw cake that I came up with after trying to dissect one of the numerous ones we’ve bought.

Base

  • 200g Almonds
  • 100g Walnuts
  • 200g Dates
  • 100g cranberries
  • 2 tablespoons coconut oil

Filling/Topping

  • 1 avocado
  • 200ml coconut milk/cream
  • 100g ground cashews
  • 1tbs cocoa powder
  • 1tsp Macca powder
